Troi seems like she wasn't paying attention to the poker game, didn't care if she won. Maybe let him win, cuz of being an empath. Data was focusing on the odds but didn't understand bluffing.
La Forge is blind but has a visor that can see the full electromagnetic spectrum like x-rays and can see which card is which, Worf will attack anyone he suspected of cheating.
This makes for a very interesting dynamic. Mix their array of unique abilities that can break a normal poker game, and how a significant part of playing is recognizing subtle behavioral cues in people, and it seems like this should not be possible. Perhaps they have some kind of agreement to suspend these abilities to a degree for the fun of the game, or maybe... they have evolved beyond what we consider the goals in poker to be, such as it not being about 'winning' the game itself, but as a team-building exercise where they get to know each other better and how they react in certain circumstances.
